The Newest Café Hollander Tosa Location Boasts an Award-Winning Breakfast Sure to Make the Most Important Meal of the Day Worth Sharing
Those searching for culinary variety on Milwaukee’s West Side were pleasantly surprised when Diablos Rojos opened a second Café Hollander® location in the heart of Tosa Village this past summer. The flourishing new location offers fantastic family-friendly breakfast selections that have earned the restaurant the title of Milwaukee’s Best Breakfast for 2009. The award, voted on by local Milwaukee parents through Nickelodeon® 2009 Parent’s Picks, emphasizes the importance families place on sharing morning mealtime with loved ones.
“Enjoying a healthy breakfast or brunch with family and friends is a great way to refuel the body and jump-start your day,” suggests Chef Ross Bachhuber of Café Hollander. Make meal preparation a family affair by involving children in food prep and ingredient selection. It not only puts food on the table faster, but improved eating habits have been shown to come with “ownership” of meal making. “Party hosts also forget that gathering friends for a late morning brunch provides a unique alternative to the traditional dinner party and can be easier to prepare while still being just as much fun,” says Bachhuber.
To pave the way to successful breakfast gatherings, Chef Bachhuber offers a revved up French Toast recipe the kids will love having a hand in, as well as a Farmer’s Market Strata sure to have your brunch brood wanting more. In addition, the experts at Beer Capitol suggest giving the mimosas a break in lieu of some craft brews that can bring magic to your late morning menu.
Café Hollander French Toast with Caramelized Bananas
·6 large farm-fresh eggs
·1 cup whole milk
·¼ cup half-and-half
·1 tablespoon vanilla extract
·1 teaspoon cinnamon
·1 teaspoon nutmeg
·¼ cup granulated sugar
·¼ cup GranGala® Liqueur, optional
For Banana Topping
·2 tablespoons butter
·2 bananas, peeled and sliced
·¼ cup brown sugar
·¼ cup GranGala® Liqueur, or orange juice
For French Toast
·2 tablespoons butter
·8 slices brioche, or any thick-cut French bread
1.Whisk together all ingredients needed for the batter until smooth and well incorporated.
2.In a sauté pan on high heat melt 2 tablespoons butter, add bananas and sauté for 2 minutes. Add the brown sugar and continue to sauté for half a minute.
3.Deglaze the pan with GranGala® or orange juice.
4.Reserve the bananas and sauce until ready to serve.
5.On a preheated griddle or in a sauté pan on medium-high heat add 2 tablespoons butter.
6.Place a slice of brioche in the batter to coat and place on the griddle, cooking for 2 minutes on each side. Repeat with additional bread.
7.To plate, cut 2 slices of brioche diagonally and place on serving dish. Spoon some of the banana mixture on top and garnish with fresh berries.
8.Serve with maple syrup and a sprinkle of powdered sugar.
Farmer’s Market Strata
·12 farm-fresh eggs
·2 tablespoons olive oil
·½ cup half-and-half
·2 tablespoons salt and pepper mix
·1 bunch rainbow and Swiss chard, stems removed and diced, leaves chopped
·2 cups grated white cheddar cheese
·1 large Spanish onion, halved and sliced
·2 cloves garlic, minced
·12 slices vine-ripe tomatoes
·6 slices day-old bread
1.Whisk eggs and half-and-half together until smooth.
2.Grease a 9 x 11 baking dish with olive oil, canola oil or butter.
3.Cover the entire bottom of baking dish with bread slices.
4.Cover bread with enough egg mix to saturate, letting it soak for a few minutes.
5.In a sauté pan on high heat add olive oil and sauté the onions and chard stems until onions are soft.
6.Add garlic to sauté along with the salt, pepper and chard. Once chard has wilted and is cooked through, take off heat and let cool.
7.Place half of veggie mixture on top of bread and spread out evenly.
8.Cover with half of the white cheddar and then with tomatoes.
9.Add more egg mix and layer with veggies and tomatoes, finishing with the rest of the cheese on top.
10.Cover the dish with plastic wrap and cover the plastic wrap with aluminum foil.
11.Place in 350° oven for 45 minutes.
12.Remove from the oven and take off plastic wrap and aluminum foil. Place back in oven at 400° for about 10 to 15 minutes to brown top.
13.Pull out and let cool slightly before cutting and serving.
When pairing beer with brunch selections, pale ale and witbier styles provide nice complements to the meal. Pale ales are lighter in body and won’t overpower the palate; they also have a good amount of hops that will help lift the heavy flavors of eggs and bacon. For French Toast and pancakes, the malted wheat of a witbier brings out cereal and bread-like flavors that match up well with these breakfast favorites. Here are a few Beer Capitol brunch selections.

·Lakefront White – Brewed with Wheat malt and spiced with coriander and orange peel, this witbier is yeasty with a light aroma of fruit and spice. A spritzy carbonation lends to the beer’s crisp, refreshing taste.
·Chimay Tripel (White) – A trapist beer, with an agreeable combination of fresh hops and yeast. Fruity notes of Muscat and raisins give this brew a particularly attractive aroma that complements its touch of bitterness.
·Bell’s Two Hearted Ale® – An India pale ale, this brew with its American malts and enormous hop addition give it a crisp finish and incredible floral hop aroma.
